Inspired by his father and their leisurely afternoons at the markets of northern England, Executive Chef Raymond Taylor has always been passionate about food and the excitement it brings to family and friends. Over the course of his 25 year career, Chef Taylor has prepared dishes for Michelin Star-rated restaurants across the globe prior to his arrival at Niagara Casinos in 2007.
With numerous accolades including Fallsview Casino’s CAA/AAA Four-Diamond Award winning 21 Club Steak & Seafood and Ponte Vecchio restaurants, Chef Taylor’s commitment to local, sustainable cuisine and innovative menus is steadfast. He creates dishes that are simple yet elegant, letting the essence of the star ingredients shine through.
From deconstructing recipes and reinventing them with a unique perspective, Chef Taylor illuminates freshness and crafts intense flavours with every dish.
Pastry Chef Pradeep Dharmawardane, Niagara Casinos
A recent silver medal winner at the 2016 Internationale Kochkunst Ausstellung (IKA) Culinary Olympics in Erfurt, Germany, Niagara Casinos’ Pastry Chef Pradeep Dharmawardane’s draws inpiration from his travels across the globe. After building his culinary passport with positions in Sri Lanka, Dubai, Washington and the Bahamas, he joined the Fallsview team in 2007.
One of Chef’s favourite events is the Icewine Gala where he uses theatrical lighting and décor to showcase the pinnacle of pastry excellence. Every year Chef Dharmawardane lets his imagination run wild developing custom playful confections that are truly unforgettable.
