East Coast Oysters with Passion Fruit Mignonette & Fresh Mint
Oysters and sparkling are a great way to wake up your palate. The quality of both of these products is paramount. A Crisp revitalizing wine with fresh oysters is a treat.
This sparkling wine has great acidity and acts as a fantastic contrast to the salty brine of the oysters. We are looking to further enhance some of the characteristics found in our Sauvignon Blanc by introducing mint with its anise notes and tropical excitement of passion fruit. The mint also aids in refreshment with its natural cooling properties.
- 150ml Inniskillin sparkling Vidal Icewine
- 100ml seasoned rice wine vinegar
- 60 ml passion fruit puree
- 2 finely diced shallots
- Fresh mint to garnish
- Salt & pepper to taste
- Good quality oysters, live and in shell.
Combine wine, vinegar, passion fruit and shallots. Season to taste with salt and pepper. Shuck your oysters and top each with roughly ½ teaspoon of dressing. Garnish with mint.
